Carrot cake

Heya, sorry for the long absence. Been extremely busy and now busy packing and getting ready to go home. It's fasting month, and I had always been craving for carrot cake. The thing is that, I don't eat raisins and most carrot cakes available in shops/cafes come with raisins. So I had to sort my cravings out by making it myself. Didn't have a recipe and just blob everything in a bowl and pop in the microwave.

Here it goes.



Ingredients:
  • 1 cup olive oil
  • 2-3 eggs
  • 1 cup of castor sugar
  • Shredded carrots just enough to cover the batter
  • Flour just enough to make it into a cake batter consistency
  • 1 tbsp bicarbonate soda
  • Pinch of cinnamon powder
  • Chopped walnuts
Methods:
Just mix everything. And since I like it moist, I steamed it with microwave (microwave on high for 15 mins with water in a mig at the side).
Then bake in a oven just to brown it slightly. Let it cool in the oven slowly.

Iced it with cream cheese icing.
